Our commitment to providing quality meats comes hand in hand with our commitment to creating a short supply chain. By sourcing regionally and processing locally, we aim to minimize the distance our food travels from farm to plate because we believe it is better for the environment. We partner with farmers in the Great Lakes Region whose practices show a respect for the land, the environment, and the well-being of their animals. We visit all of our farm partners to validate their soft handling practices, as well as the animals' housing, diet, and access to exercise. Our goal is to foster stronger connections between producers, consumers, and communities

Building A New Home In Eastern Market

You can find us every Saturday of the year in Shed 3 during the summer months and Shed 5 in the winter months. In 2024, we broke ground on our permanent home on Riopelle Street! Our new building will house a state-of-the art meat processing facility and a new restaurant run by our sister restaurant Marrow.

 
  • This is where the magic will happen. A 14,000 square foot facility including a USDA-inspected processing where we will butcher raw cuts and produce value-added products for sales in our shops, restaurants and through our distribution partners.

  • Love our Kercheval butcher shop? This will be twice as big featuring the same best-of cuts and freshly made in-house items.

  • Want to taste the best of what we offer? The creative hands at Marrow will be powering this restaurant, using the freshest cuts and ingredients while continuing our emphasis on full animal utilization.
