Choripán, is a beloved Argentinian sandwich typically made with a pork-based sausage, chimichurri, and grilled crusty bread – simple, satisfying, and bursting with flavor! While our chef-crafted Marrow Detroit Provisions Andalucía Sausage is inspired by classic Spanish chorizo, it is the perfect match for this Argentinian favorite. Our Andalucia chorizo is herbaceous, aromatic, and bold, made with humanely raised pork from Albright Farms in Coldwater, Michigan. The flavors contrast so perfectly with a fresh, bright, roughly chopped chimichurri and crusty bread soaks up all the juices.

Ingredients

  • 1 lb - Marrow Detroit Provisions Andalucia Inspired Chorizo

  • 1 pinch - Kosher Salt

  • 1 - Roma Tomato

  • 1 - Baguette or Sourdough Loaf

Chimichurri:

  • 1 cup - cold Water

  • 3 cloves - Garlic

  • 1 tbsp. - Kosher Salt

  • 1 oz. - picked Curly Parsley

  • 1 oz. - picked Mint

  • 1 oz. - picked Oregano

  • 1 oz. - picked Cilantro

  • 2 tsp. - Crushed Red Pepper Flakes

  • 4 tbsp. - Red Wine Vinegar

  • 120 mL - Extra Virgin Olive Oil


Directions

Marrow Detroit Provisions Andalucia Sausage - Choripan Style with Chimichurri:

Chimichurri:

  • Rough chop herbs

  • In a food processor blend garlic, salt, and water

  • Use “pulse” to add herbs one handful at a time

  • Slowly pour in the red wine vinegar while continuing to pulse

  • Slowly pour in the extra virgin olive oil while continuing to pulse

  • Sprinkle in crushed red pepper & mix

Cook Andalucia Sausage:

  • Heat a cast iron or grill to medium-high heat & oven to 300 degrees

  • Sear the links on two sides

  • Butterfly slice each Andalucia sausage lengthwise one-third of the way into the link

  • Sear the inner portions

  • Place in oven to finish cooking until 130 degrees

  • Pull sausage from oven and let rest. Reserve rendered fat to toast your baguette

Toast and Assemble:

  • Slice baguette into 2” Thick Slices for Toasting

  • Using your reserved fat from the chorizo, toast baguettes

  • Place your Andalucia sausage on a slice of toasted baguette

  • Spoon a healthy amount of chimichurri over the sausage

  • Dice tomato and sprinkle on top

  • Top your Choripán with a second slice of bread

  • Serve with a side of field greens lightly dressed in olive oil, salt and pepper

  • Enjoy!
