Back to school season, and the first cool nights have us dreaming about fall colors, sweater weather, and hearty soups. Marrow Detroit Provisions sausages at home make it simple to whip up a family-friendly dinner. Our chef-crafted sausages bring the flavor, all you need to do is simmer them up with a handful of ingredients and this homemade soup will impress guests of all ages. Even better, you don’t need to compromise your sourcing ethics to have flavor-forward, locally sourced, humanely raised sausage bringing the protein to this healthy family meal.

Ingredients:

  • 1lb Marrow Detroit Provisions Toulouse sausage cut into bite-size pieces 

  • 1 large onion diced 

  • 1 tbs Italian seasoning 

  • 1 tsp black pepper 

  • 1 tsp white pepper 

  • 4 garlic cloves minced 

  • 3 small potatoes peeled and diced into ½” cubes 

  • 6 cups Marrow butcher broth or store-bought broth 

  • 2 cans (15oz) cannellini beans 

  • 2 cups roughly chopped spinach 

  • 1 tbs chopped parsley 

  • 1 squeeze of lemon 

  • 1 tbs olive oil


Directions

Marrow Detroit Provisions Toulouse Soup:

  • Add a tablespoon of olive oil to a large soup pot over medium-high heat.

  • When oil is shimmering add Toulouse sausage. Sear slices of Toulouse on both sides. 

  • Add diced onion, Italian seasoning, and pepper to saute with the sausage.

  • When onions are golden brown stir in the garlic until fragrant. 

  • Add potatoes and stir to combine. 

  • Add broth and cover with a lid. Allow soup to simmer for 15 minutes 

  • Add cannellini beans and allow soup to continue simmering until potatoes are soft.

  • Take the soup off heat and stir in the roughly chopped spinach, allowing it to wilt in the hot soup.

  • Add parsley and squeeze of lemon and salt to taste.
