Ingredients:
2 large carrots
2 celery sticks
4 peeled garlic cloves
1 small yellow onion
2 tbs extra virgin olive oil
1 lb Basilicata
2 cups cabernet sauvignon (or whatever dry wine you have on hand)
½ cup tomato paste
2 bay leaves
1 lb pasta (we used rigatoni)
1 cup pasta water
½ cup shredded parmesan cheese
Directions

Chop carrots, celery, garlic, and onion into equal-sized pieces (or puree in a food processor until they form a paste).
Remove sausage from casing while heating olive oil in a large saucepan.
Brown the sausage and then break it apart, saute until it is cooked through and remove from pan, leaving the fat behind.
Add your vegetables to the pan and saute until they're fully cooked and browning.
Mix tomato paste in with veggies and cook for a minute or so.
Add red wine to the pan and scrape the delicious browned bits from the bottom of pan into the sauce.
Add bay leaves and cooked Basilicata to pan and simmer for about 10-15 minutes to reduce the wine by half.
Cook pasta according to package until al dente.
Drain and reserve 1 cup of the pasta water.
Add reserved pasta water to the sauce until the consistency is to your liking.
Top pasta with bolognese sauce, shred parmesan cheese over the sauce and enjoy!
