Detroit Breakfast Sausage Gravy and Biscuits

This recipe is one that has traveled with Chef Sarah since her days at Parks & Rec, Detroit’s first tiny fine-diner. There she created this foundational gravy recipe and we think any one of our sausages would work well in this application. But the obvious choice is Detroit Breakfast Sausage!

Ingredients:
½ lb Marrow Detroit Provisions Breakfast Sausage
¼ of one onion, small diced
1 clove minced garlic
¼ cup flour
Soy sauce, to taste
2 cups whole milk
2 cup heavy cream
2 tbsp maple syrup
Cayenne pepper, to taste
Thyme, to taste
Salt, to taste
Directions
Marrow Detroit Provisions Detroit Breakfast Gravy:
Begin by removing sausage from the casing or rough chopping in the casing.
Put pot on medium and begin cooking sausage, when meat begins to stick and brown, deglaze with soy sauce and add chopped onions
Season with salt and sweat onions til translucent
Add Milk and Heavy Cream and reduce heat to Med - High to simmer and reduce until your desired consistency.
Season with Cayenne, Thyme, Salt, Pepper and Maple Syrup to taste
Biscuits:
Freeze butter. Once frozen, grate butter using the largest side of grater
Combine Flour, Baking Soda, Baking Powder, and Salt
Add frozen butter into dry mixture working lightly with hands
Create a "well" in the middle of butter/dry mixture and pour in cold buttermilk
Continue to work lightly with hands
Remove from bowl and roll out in an oval shape to maximize yield
Chill dough and portion by pressing straight down with cookie cutter
Bake at 350 for 15 - 18 mins
Place finished biscuits on rack to cool
